A local crustacia from rivers of Guadeloupe, island of the French Antillas in the Caribbean. Very difficult to find underwater, it is now essentially produced in aquaculture. I must confess that it is absolutely delicious when cooked with coconut sauce and hot chili !
Please note his rich blue color which totally disappear when it's cooked (becomes red like all shrimps)... |
