It is always difficult to shoot against the sun. If you had pointed the exposure meter at the animal, more details would be visible.
Generally, I personally do not like photos which have been too much "photo-shopped". However - in this case - a bit of work on the exposure, contrast and saturation can improve your interesting capture a lot.
