Prickly Pear Cactus
Genus Opunita

All prickly pear cactus have flat, fleshy pads that look like large leaves. The pads are modified branches or stems that serve several functions_ water staorage, photosynthesis and flaower production.

The fruits of most prickly pear are ediable and are sold in stores under the name, "tuna"
Prickly pear pads are also cooked and eaten as a vegetable. it is sold in stores as "nopalito"

Medical interest has formed for the prickly pear because they are rich in slowly absorbed soluable fiber that may help keep blood sugar stable. Also, in
cholesterol by keeping the bad low and the good stable.
Much more research is needed,

Prickly pear is found in the American SW, they have red, yellow or purple flowers.
They vary in height depending on the species from less than one foot to 6 or 7 feet.
