Romans had a great taste for snails, and they were the first ones to create breeding farms.
The "Helix Pomatia" species (escargot de Bourgogne) is protected in France, as well as the smaller species "Helix Aspersa" (petit-gris). Both are appreciated by gourmets.
Today, picking is forbidden. Some you find in restaurants are coming from countries where it's still authorized, but also and more and more from breeding farms. Besides humans and pesticids, snails have many natural predators like hedgehogs, toads, some birds, and can even be attacked by insects.
The species shown is the largest. To give you an idea, I've posted a workshop. |
