I have tried to get a shot of two Coots that live at my local pind for some time now but have never been totally satisfied with the results, I'm still not happy with this one as I think I have lost some of the Red in the eye and could be sharper but when I added a touch of USM it added noise and I couldn't get the balance right, think I will have to atart taking sharper shots to start with.
Coots
The coots are medium-sized water birds which are members of the rail family. They constitute the genus Fulica.
The greatest species variety is in South America, and it is likely that the genus originated there.
These rails are all predominantly black in plumage, and, unlike many of the rails, they are usually easy to see, often swimming in open water rather than skulking in reedbeds.
They have prominent frontal shields or other decoration on the forehead, and coloured bills, and many, but not all, have white on the undertail. Like other rails, they have lobed toes.
They tend to have short, rounded wings and be weak fliers, although northern species are nevertheless capable of covering long distances; the American Coot has reached Great Britain and Ireland on rare occasions. Those species that migrate do so at night.
Coots can walk and run vigorously on strong legs, and have long toes that are well adapted to soft, uneven surfaces.
These birds are omnivorous, taking mainly plant material, but also small animals and eggs. They are aggressively territorial during the breeding season, but are otherwise often found in sizeable flocks on the shallow vegetated lakes they prefer.

Hi Hilary is my attempt to improve your image, just remember these all work better with the full size original.
I 1st Copied and pasted into Photo-shop
2nd made a fairly tight selection around the eye,
then went to Image ,adjustments Hue and saturation,
selected Reds from the drop down menu and move the saturation slider to +43 and the Hue one to -4 this seemed I felt to give a more natural colour to the eye.
then to the sharpening.
1st make a duplicate layer via copy,
2nd Go to Filter and from the drop down menu select Other and then High Pass this will open a dialogue box, set the slider to about 10.0 and click OK, then in the Layers palette click on the left hand menu and select Hard light and in the right one marked Opacity click and reduce down till you feel it looks OK usually some where between 30-70% in this case 53%
When you are happy flatten image and use save to web to adjust the file size back to just below 200K
