[Note Guidelines] Photographer's Note
Sea urchins or urchins are small, spiny, globular animals which, with their close kin, such as sand dollars, constitute the class Echinoidea of the echinoderm phylum. There are c. 950 species of echinoids inhabiting all oceans from the intertidal to 5000 meters deep.Their shell, or "test", is round and spiny, typically from 3 to 10 cm (1.2 to 3.9 in) across. Common colors include black and dull shades of green, olive, brown, purple, and red. They move slowly, feeding mostly on algae. Sea otters, wolf eels, triggerfish, and other predators feed on them. Their "roe" (actually the gonads) is a delicacy in many cuisines.
The name "urchin" is an old name for the round spiny hedgehogs that sea urchins resemble.

RICCIO DEL MAR ROSSO

La classe Echinoidea fa parte del phylum Echinodermata e comprende gli organismi marini comunemente denominati ricci di mare.
Sono organismi bentonici dotati di un esoscheletro ricoperto da aculei, utilizzati per piccoli movimenti. La simmetria radiale caratteristica dello stadio adulto degli echinodermi č riscontrabile nelle venature del guscio, sempre con un disegno pentagrafico (pentamero - stella a 5 punte). La bocca, chiamata lanterna di Aristotele, si trova nella parte inferiore del corpo.

La struttura architettonica dell'esoscheletro degli echinoidi regolari č una vera e propria costruzione naturale divisa a sezioni simmetriche radiali con incastri dentellati, le quali a loro volta sono suddivise in placche a sezione trasversali. Negli echinoidi irregolari come lo Spatangus purpureus, il disegno č sempre stellare ma cuoriforme e asimmetrico. Č possibile ritrovare molti di questi esoscheletri nei fondali marini.
Le gonadi, volgarmente definite uova, del Paracentrotus lividus sono commestibili e molto ricercate specialmente nel periodo invernale. Particolarmente pregiate per il sapore e compattezza quelle di rosso corallo acceso.
