chicory is related to Belgium endive whose leaves are eaten as a salad green.
The taproots, which contain the complex carbohohydrate inulin,can be roasted,
ground and used as a coffee substitute. Chicory is from the original Arabic name
for wild chicory. The blanched leaves of chicory are reportedly the esteemed used
in France for winter salads.
