Hi Murray, I think you should get down to the Jervis Bay area anyway, but there is a lot more going for it than these Oystercatchers.
Based on the literature these can be found around Australia, but they are an Ocean shore bird. This is the first and only time I've seen these guys but based on the literature, I would have an equal chance of seeing them close to Sydney, or Newcastle or anywhere where there is a rocky shore such as this. It sounds though that they may not be as prevalent on the harbour, or further inland which is probably why we haven't seen them around here as much. I was curious and so took a look on the site. Chris Chafer got some good shots of these too, at Port Kembla, near Woolongong in May-2005.
